Introduction
School foodservice professionals face growing pressures to operate school foodservice programs with increased efficiency, and conduct the school foodservice program not only as non-profit units, but as self-supporting units as well. It no longer is sufficient to provide a historical record of financial performance and meet budget goals; professionals must justify their performance against best practices. The Office of food and Nutrition Management’s mission is to provide effective Child Nutrition Programs to Florida students through financial resources.
